A Decade Ago Today…

Greg and I were married at Proudfoots on the River, Warrnambool, Victoria.  The ceremony was held in a converted boatshed (very quaint actually).  It rained, of course, but once the vows were all said and done, the rain stopped.  It was a wonderful day that was filled with many special memories and people.
I love Greg dearly, more as each year passes and I am so glad I have him by my side as we journey through the years.  We have three beautiful kids, a home, mortgage, well, the whole package really.  Wouldn’t have it any other way.  We only hope the next 10 years can be just as much fun, filled with all the wonder of new adventures waiting to be had.  Love you sweetheart, Jacinta xx

For the Girls

I received some fabric goodness in the mail today.  I decided that I would like to make a quilt each for the girls for their birthdays.  I had a lovely time choosing out what I wanted from the Fat Quarter Shop.  I am definitely buying from them again.  Great communication and prompt shipment.  I chose the new Sunkissed fabric (By Sweetwater) for Tenneille’s quilt and the pattern is called Summer Breeze.  I love the bunting on the quilt.  For Scarlett I chose a design by Amy Hamberlin called Marabella.  It came in a kit form.  I ordered Anna Maria’s Innocent Crush charm pack for myself.  Not sure what I am going to make with it yet.  Let’s just say I am one happy woman with big ambitions.  With birthday deadlines to meet, I hope to have my girls snuggled under a whole lot of handmade loveliness in the not too distant future.

Lovin’ This Space

I’m hoping to make this a regular feature on the blog.  Lovin’ This Space will document little spaces that I want to share with you.  Little snippets of loveliness.  This picture is from our ensuite.  I purchased the gorgeous orchid on the weekend.  I knew immediately when I saw the orchid, I had the perfect spot for it.  Now every time I pass by the door to the ensuite, I catch myself stopping and staring at it’s graceful beauty.

An Early Harvest

With all the wet weather we have had here, combined with an army of snails that made a meal of my potato leaves, I had to harvest my potatoes early.  While there might not be enough to sustain us for any great length of time,they were organically grown.  Here is a past post featuring the spuds in their glory days.  My veggie patch is still a work in progress due to inclimate weather!   Hope your veggie garden is doing better than mine.  I won’t even get started on the apples.

Banana Pecan Cake

Now, whenever I am asked for recipes, I can be somewhat hesitant, not that I don’t like sharing recipes (after all, that is part of the reason I started blogging) it’s just, I am one of those annoying cooks who whips things out of thin air.  This recipe is one of those.  I actually measured the ingredients as I went.  Hopefully you can be munching on some warm and delicious Banana Pecan Cake too.

This recipe is dairy free

Ingredients:

2 ripe bananas, mashed (A tip, I freeze bananas when they are almost at the point of no return and use them for baking)
1/2 cup raw sugar
1/4 cup oil
2 eggs
1 good handful of pecan nuts, chopped coursely
1 heaped cup plain/all purpose flour
1/2 tsp baking powder
1 tsp cream of tartar
1/2 tsp ground nutmeg
1/2 tsp mixed spice
cooking spray

Method:

Place eggs and sugar in a bowl and beat until thick and creamy.  Add oil and beat until well combined.   Add nuts and mashed banana.  Stir until combined.  Add sifted dry ingredients and stir gently until combined.  Pour into a greased and lined baking tin.  Bake in moderate oven for approx. 35 mins or until cooked through.  Cool on a cake rack, or eat while still warm.  Dust with icing sugar if desired.

Variations:

  • To make it egg free substitute eggs for an extra 1/4 cup oil.
  • Nuts can be omitted if necessary.
  • Nuts can be substituted for an handful of chopped dates.
    Sugar can be reduced to 1/3 cup if desired

Rainy Days = Lots of Yummy Food

It has rained here almost non stop the last three days, but that hasn’t stop the girls having fun out in the wet.  Lots of puddle jumping and splashing.

Jairah and I danced around the kitchen to Caro Emerald (her music is so much fun, you can’t help but shake your booty).  If you haven’t heard her music yet, check it out.  I have her album called, Deleted scenes from the cutting room floor (long-winded I know).

We made hot cross happy buns.  We call them happy  buns as they haven’t got a cross (yes, I have a weird sense of humour).  The recipe is from my bread machine recipe book.  I prefer to make two large buns instead of smaller sized buns.  The only problem is they are so good, you can’t stop at one piece.  Of course we ate it straight out of the oven with melted butter.  Scarlett didn’t believe me when I said I could eat a whole bun (I really could) so I made a promise to leave some for tomorrow.  Although that didn’t stop Jairah helping himself to a large portion from the kitchen bench!  Can’t blame him really.

We have also made bread, chicken soup a banana pecan cake and lemon delicious.  Cooped up indoors does have some advantages!  I think my kitchen may be groaning from all the hard work it has been subjected to, but our tummy’s are very satisfied indeed!

Reflecting

Reflecting on the flood devastation in Queensland, lives lost and other lives altered for evermore, made me hug my kids more today, for longer and just embrace whatever our day brought.  Australian’s have an amazing and generous spirit whenever the country experiences a natural disaster and for that I am proud.  I appreciate the people who are currently doing all that they can to help those affected.  My heart goes out to you all.

Here ’tis

I have competed my Sideways Grande Hat from Boutique Knits and I am in love.  It is beautiful and soft and the colour is so rich and warm. I forgot to mention in my previous post that the cable is actually false.  It’s a very quick knit, as long as you don’t mess it up, ahem.  With the weird weather we are experiencing at the moment (doesn’t make for great photo’s), I can foresee some more ‘Summer’ knitting in my future. Some Colour to Brighten Your Day

Most of the plants on our block are natives.  We have a scattering of azaleas and rododendrons too.  We also have two hydrangea plants just outside of the girls bedroom.  They are at their best right now and the colours just about take my breath away.  The hues of the flowers range from white to blue to mauve.  I love how they change colour on a daily basis.  Enjoy!
