Tuna and Fresh Tomato Pasta

I made this up for Greg and I the other day.  I felt it was blog worthy.

Ingredients:

Serves 2-3 people

4 cups cooked pasta
1 small tin tuna, drained (approx 90-100g, I prefer tuna in oil)
1 tomato, diced (I prefer Roma tomatoes)
1 onion, diced
1 egg
1/4 cup cream
1 clove garlic, finely chopped
1/4-1/2 tsp dried chilli flakes
parsley to garnish
salt to taste
1 tbsp oil

Method:

Fry off onion and garlic in oil.  Add tuna, tomato, cream, chilli and salt.  Simmer for approximately 5 minutes on medium heat.  Stir in egg and mix quickly to evenly distribute throughout sauce.  Turn off heat.  Toss in cooked pasta and coat well with the sauce.  Serve immediately garnished with chopped parsley.
