Cinnamon Scrolls

These scrolls are so yummy.  We make them about once a month as a special treat on the weekend.  It’s really hard not to stop at one.  They smell divine while cooking and are best eaten still warm from the oven with a nice hot cup of tea.  They do take a while to prepare, but they are worth it, trust me.  I use my bread maker to prove the dough, but you can also make them without a bread maker.

Scroll ingredients:

4 cups plain flour
2 eggs
1 cup warm milk
1/2 cup sugar
1/2 cup melted butter
3 tsp dry yeast

Filling ingredients:

1 cup brown sugar
2 1/2 tsp ground cinnamon
1/3 cup soften butter

Icing ingredients:

1 1/2 cup pure icing sugar
1/2 cup cream cheese
4 tbsp butter
1/2 tsp vanilla essence

Method:

Place filling ingredients in bread machine and select dough function.  In the meantime, mix filling ingredients with electric beaters until light and soft.  Put aside filling.  Once dough has risen for the desired time in the bread machine, place it on a lightly floured surface and roll out until approximately 1/2 cm thick.  Spread dough surface evenly with filling mix.  Roll the dough up lengthwise.  Cut roll up into 1.5cm pieces (approx, 1″).
Place on baking tray lined with baking paper.  Leave scrolls to rise in a warm place for 1 hour.  In the meantime, beat the icing ingredients in a bowl and set aside.  Place scrolls in a pre-heated oven @180 degrees celsius (350F) for approximately 12 minutes or until golden brown.  Once removed from the oven, place scrolls on a plate and top with icing mixture.
