{"id":1518,"date":"2012-03-07T11:31:40","date_gmt":"2012-03-07T11:31:40","guid":{"rendered":"http:\/\/www.embracingitall.com\/?p=1518"},"modified":"2012-03-07T11:31:40","modified_gmt":"2012-03-07T11:31:40","slug":"lamb-shank-and-veggie-soup","status":"publish","type":"post","link":"http:\/\/www.embracingitall.com\/?p=1518","title":{"rendered":"Lamb Shank and Veggie Soup"},"content":{"rendered":"<p>This is an all time favourite of mine. \u00c2\u00a0It brings back memories of sitting in my nana&#8217;s kitchen, enjoying every flavoursome mouthful of homemade soupy goodness. \u00c2\u00a0I loved nana&#8217;s soup so much, I requested it every time we went to visit. \u00c2\u00a0She always made the same soup and I never tired of it, ah yes, food for the soul. \u00c2\u00a0Nana used to add a few more ingredients, but I have simplified the recipe over the years without compromising the flavour.<\/p>\n<p>I have made this recipe both on the stove top and using the slow cooker. \u00c2\u00a0The slow cooker certainly produces a more flavoursome soup.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 lamb shanks<br \/>\n2 onions, coarsely chopped<br \/>\n2 cloves garlic, crushed<br \/>\n2-4 carrots, depending on size, coarsely chopped<br \/>\n6 celery stems, coarsely chopped<br \/>\n1\/2 cup pearl barley<br \/>\nstock powder to taste<br \/>\napproximately 3 litres water<br \/>\n1 tbsp oil<br \/>\n(cream optional)<\/p>\n<p><strong>Method for slow cooker:<br \/>\n<\/strong>Cooking time may vary depending on individual slow cookers<\/p>\n<p>place oil and onions in a pan and cook for 2 minutes. \u00c2\u00a0Add lamb shanks and brown slightly. \u00c2\u00a0Place onions and lamb shank into slow cooker along with the other ingredients, except pearl barley. \u00c2\u00a0Pour in water. \u00c2\u00a0Cook on high for approximately 6 hours. \u00c2\u00a0(I often put the soup on in the evening and cook on low overnight for approximately 8-10 hours).<\/p>\n<p>Carefully remove lamb shanks, ensuring there is no bone left in slow cooker. \u00c2\u00a0Cut off meat and set aside. \u00c2\u00a0With a slotted spoon, scoop out most of the veggies. \u00c2\u00a0When cooled slightly, place them in a food processor and blend until smooth. \u00c2\u00a0Add the blended veggies back into the soup along with the meat and pearl barley. \u00c2\u00a0Continue to cook until barley is tender. \u00c2\u00a0Add stock powder to taste. \u00c2\u00a0Serve with buttered toast if desired. \u00c2\u00a0For a creamy soup, once served, add a dollop of cream.<\/p>\n<p><strong>Method for stove top:<\/strong><\/p>\n<p>Add oil and onions to a large pot. \u00c2\u00a0Cook for 2 minutes. \u00c2\u00a0Add lamb shanks and brown on all sides. \u00c2\u00a0Add the garlic, carrots and celery. \u00c2\u00a0Pour in water and simmer soup for at least 1-2 hours, stirring occasionally. \u00c2\u00a0Carefully remove lamb shanks, making sure no bones are left behind. \u00c2\u00a0Once cool enough, cut off meat and set aside.<\/p>\n<p>With a slotted spoon, scoop out most of the veggies.\u00c2\u00a0When they are cooled slightly, place them in a food processor and blend until smooth. \u00c2\u00a0Add the blended veggies back into the soup along with the meat and pearl barley. \u00c2\u00a0Continue to cook until barley is tender. \u00c2\u00a0Add stock powder to taste. \u00c2\u00a0Serve with buttered toast if desired. \u00c2\u00a0For a creamy soup, once soup is served, add a dollop of cream.<\/p>\n<p><a href=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1519\" title=\"lambshanksoup\" src=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup.jpg\" alt=\"\" width=\"600\" height=\"450\" srcset=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup.jpg 600w, http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup-300x225.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_1520\" style=\"width: 385px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup2.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1520\" class=\"size-full wp-image-1520\" title=\"lambshanksoup2\" src=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup2.jpg\" alt=\"\" width=\"375\" height=\"500\" srcset=\"http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup2.jpg 375w, http:\/\/www.embracingitall.com\/wp-content\/uploads\/2012\/03\/lambshanksoup2-225x300.jpg 225w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><\/a><p id=\"caption-attachment-1520\" class=\"wp-caption-text\">This boy of mine love his soup too, or &quot;zoop&quot; as he calls it.<\/p><\/div>\n<p>Enjoy!
